What does a “pile of fun” look like?? Have you ever wondered? Do you sit and ponder strange things like that just like I do?

I definitely don’t.

Do you ever feel like just baking something cheerful?? Doesn’t a big chewy chocolatey rainbow cookie sound cheerful?
mmmmmhmmmmmm. Do not deny it.
Note my baking mess on the side accumulating…(or don’t..)

When rolling your dough to go on the cookie sheet – tear the ball in half. Then place one of the halves rough side down. Then place the second half rough side up – right on top of the other half. This makes for an amazing chewy centre!
Mmmmhmmm – I know what you are thinking. You want one. Either come on over and taste…or you should make them.
Rainbow (cheerful) Cookies
Yields – 18 GINORMOUS cookies – or 36 Smaller (good sized) cookies
2 cups + 2 tablespoons all-purpose flour
1/2 teaspoons baking soda
1 1/2 sticks (12 tablespoons) of salted butter, melted and cooled
1 cup brown sugar
1/2 cup sugar
1 egg + 1 egg yolk, at room temperature
2 teaspoons vanilla extract
1 cup mini m&m’s (I used 3/4 cup of mini m&m’s and 1/4 cup of dark chocolate chips and chunks)
Preheat oven to 325 degrees F. – is what Howsweets says….but my oven cooked them at 350 degrees perfectly.
Combine your flour and baking soda in a large bowl. In a smaller bowl,combine your totally melted and cooled butter and sugars and mix together. THENNNN… Add the egg, egg yolk, and vanilla and stir until mixed.
Gradually combine your flour and mix until a dough forms. It was dry at first – but if you get your hands right in there – it will mix well and form a nice dough.
Roll your dough into approximately 1 1/2 tablespoons sized balls. Then split each cookie dough ball in half. Place one half rough side down, then place the second half on top rough side up 🙂
Bake for approximately 12 minutes – or until the edges turn a slight golden brown.
Centre of the cookies should puff and look slightly less cooked. When cooled they remain chewy and delicious.

They looks really amazing. I love M&M’s (or W&W’s, depending on how you look at them!). I have tried cookies made with them long time ago and they were awesome, a colorful twist to chocolate chip cookies. Thanks for the reminder, I will make these
